Chicken and gravy

Image
Happy Weekend!! Tonight we tried something new at our house.  Chicken and Gravy over mashed potatoes.  Absolutely delicious!  Start with 2lbs boneless skinless chicken breast sliced thin. Salt and pepper chicken and cook over medium heat until it reaches 160°. Once chicken has cooked, remove it from the skillet. Add to the skillet 4 tablespoons of butter, 1 chicken bouillon cube, 1/2 teaspoon onion powder, and 1/2 teaspoon garlic powder, and 4 heaping tablespoons of flour. Stir to form a roux.  Then add 4 cups of chicken broth stirring frequently til boiling to make gravy.  Once gravy thickens, shred chicken and add it back to the gravy.  Serve over mashed potatoes and enjoy!  Check out my instant pot mashed potatoes recipe here:  https://cookingwithkeshia.blogspot.com/2019/01/instant-pot-mashed-potatoes-and-our_24.html

However we found out that recipe was a sticky mess if he tried to eat them on the way out the door.  So, today I made biscuits and gravy for breakfast and purposely cooked about a dozen extra biscuits. I love these Grands biscuits. Cook them per the package directions and when they are done, drizzle melted butter over them.  This week I used premade sausage patties. I placed 1 frozen patty on each biscuit I had cut in half.  I added a slice of Kraf...
