Hello!

 Welcome to Cooking with Keshia!      I am a busy wife, mom, and nurse. I've been cooking since I was old enough walk. However, working full time and the busy schedule of 3 kids, I was struggling to find time to cook. I was introduced to an Air Fryer. It was love at first use. Then, someone introduced me to an Instant Pot. I was so skeptical! One day I caved and gave it a try. Absolutely life changing!      I have been telling everyone I talk to about how much easier dinner time is at our house now with an Air Fryer and Instant Pot. So, I decided to start a blog to share tips and tricks and recipes for the Air Fryer and Instant Pot and also some old fashioned recipes as well.   

Chicken and gravy

Happy Weekend!! Tonight we tried something new at our house.  Chicken and Gravy over mashed potatoes.  Absolutely delicious!  Start with 2lbs boneless skinless chicken breast sliced thin. Salt and pepper chicken and cook over medium heat until it reaches 160°. Once chicken has cooked, remove it from the skillet. Add to the skillet 4 tablespoons of butter, 1 chicken bouillon cube, 1/2 teaspoon onion powder, and 1/2 teaspoon garlic powder, and 4 heaping tablespoons of flour. Stir to form a roux.  Then add 4 cups of chicken broth stirring frequently til boiling to make gravy.  Once gravy thickens, shred chicken and add it back to the gravy.  Serve over mashed potatoes and enjoy!  Check out my instant pot mashed potatoes recipe here:  https://cookingwithkeshia.blogspot.com/2019/01/instant-pot-mashed-potatoes-and-our_24.html

Breakfast Prepping

  I am going to start by saying HAPPY MEMORIAL DAY!!! Thank you so much to those that gave the ultimate sacrifice so that we can be free!!! I try to prep some breakfast sandwiches weekly so the hubs has something to eat when he gets up at 4 am for work...so I can keep sleeping. Recently I made some homemade mcgriddle sandwiches. I made mini panckaes and drizzled some maple syrup in the mix. Cooked up some bacon and eggs and assembled sandwiches and put them in the fridge so they are easy to grab and microwave of a morning. However we found out that recipe was a sticky mess if he tried to eat them on the way out the door.  So, today I made biscuits and gravy for breakfast and purposely cooked about a dozen extra biscuits. I love these Grands biscuits. Cook them per the package directions and when they are done, drizzle melted butter over them.  This week I used premade sausage patties. I placed 1 frozen patty on each biscuit I had cut in half.  I added a slice of Kraf...

Meal Planning

"What's for dinner?" "What are we eating tonight?" EVERY DAY my husband and kids would ask these questions. And for a long time my answer was the same..."I have no idea we will figure it out later". Until, I fell in LOVE with meal planning. Now I can tell you what we are going to be eating any night of the week, for the next month. I thought I would use this blog to share some meal planning ideas with you. So, here it goes...Are you a weekly planner, Monthly planner, or fly by the seat of your pants type of person? I plan monthly. I start with a blank calendar. Fill in the activities we have going on so I know what nights we need "easy" meals. I try to plan a Mexican type meal on Tuesdays. We love breakfast for dinner, so usually one night of that too.  I am going to list our meal ideas. I’m back!!!

 I’m back!  You may have noticed I have taken a few years off from blogging. Life was BUSY! In my free time I’ve discovered I have a LOVE for meal planning. I am planning to share that love with y’all. I’ll be sharing recipes, weekly meal plans, monthly meal plans, and my tips or tricks that I have learned along the way. You'll notice my kiddos have grown up on me. They are so busy, so most of my meals will be targeted for the busy family. Stay tuned for more! -Keshia

Instant Pot Chicken Fiesta Bowl

So there's something I have to say before I share this recipe. I was NOT an instant pot believer. When I first heard you could put frozen pork chops in the instant pot and they could be on the table for dinner in less than an hour I did not believe it. I was certain there was no way they could be properly cooked. So, when thinking about making this recipe I searched several different chicken recipes. When I finally came up with a cooking time of 8 minutes I was still certain the chicken couldn't be cooked through and I would have to put it back in and add more time....BUT it was done! I am more of an instant pot believer than I was before.  so here it goes... INSTANT POT CHICKEN FIESTA BOWL INGREDIENTS: PAM spray 1lb boneless skinless chicken breasts 2 cups chicken broth, divided  1 packet taco seasoning 1 packet ranch mix 1 can black beans, rinsed and drained 2 cans corn, drained 1 1/2 cups salsa 1 1/4 cups long grain white rice, rinse...

Instant Pot Mashed potatoes and Our Favorite Corn

Instant Pot Mashed Potatoes Ingredients: 3lb potatoes, peeled and cut into thirds 1 stick salted butter salt  milk After potatoes are peeled place them into the Instant Pot on the trivet.  Add 2 cups of water. Cook on Manual for 8 minutes. Rapid release pressure. Strain potatoes. Place the stick of butter into the Instant Pot. Add the potatoes back into the Instant Pot. Using an electric mixer or hand masher, mash potatoes. add salt and milk to taste.  According to my family these potatoes are better than any potatoes we've ever boiled on the stove top and they are so simple! And here's a little bonus...Its not air fried or from the instant pot...It's from the MICROWAVE! My family absoutely loves this corn.  I cook 2 packages exactly as the package directs (5 minutes per bag in our microwave but it varies by the wattage of your microwave) Add 1 stick salted butter salt to taste  and 1 tablespoo...
