Instant Pot Chicken Fiesta Bowl

So there's something I have to say before I share this recipe. I was NOT an instant pot believer. When I first heard you could put frozen pork chops in the instant pot and they could be on the table for dinner in less than an hour I did not believe it. I was certain there was no way they could be properly cooked. So, when thinking about making this recipe I searched several different chicken recipes. When I finally came up with a cooking time of 8 minutes I was still certain the chicken couldn't be cooked through and I would have to put it back in and add more time....BUT it was done! I am more of an instant pot believer than I was before.  so here it goes... Instant Pot Mashed potatoes and Our Favorite Corn

Instant Pot Mashed Potatoes Ingredients: 3lb potatoes, peeled and cut into thirds 1 stick salted butter salt  milk After potatoes are peeled place them into the Instant Pot on the trivet.  Add 2 cups of water. Cook on Manual for 8 minutes. Rapid release pressure. Strain potatoes. Place the stick of butter into the Instant Pot. Add the potatoes back into the Instant Pot. Using an electric mixer or hand masher, mash potatoes. add salt and milk to taste.  According to my family these potatoes are better than any potatoes we've ever boiled on the stove top and they are so simple! And here's a little bonus...Its not air fried or from the instant pot...It's from the MICROWAVE! My family absoutely loves this corn.  I cook 2 packages exactly as the package directs (5 minutes per bag in our microwave but it varies by the wattage of your microwave) Add 1 stick salted butter salt to taste  and 1 tablespoo...

Air Fryer Fried Chicken

Air Fryer Fried Chicken Ingredients: Chicken, my family prefers thighs. This was a 4.5lb package. You can adjust for more or less chicken depending on your family size. Kentucky Kernel Seasoned Flour Andy's chicken breading Mild and PAM Canola oil cooking spray  In a large bowl mix 1 cup Kentucky Kernel Seasoned flour and 1/2 cup Andy's chicken breading. (I actually did 2 cups of kentucky kernel and 1 cup of Andy's and this was way too much) Add chicken. Cover with lid and shake to coat the chicken in breading. Once coated remove from the bowl and place on a plate. Place the plate into the refrigerator for 30 minutes. This will allow the breading to fully stick to the chicken. After 30 minutes remove from the refrigerator and place into the basket of your air fryer in a single layer. Using the Pam Canola Oil Cooking spray spritz the top of your chicken to moisten the breading.  After spritzing with oil...

Keshia's Hashbrown Casserole

Keshia's Hashbrown Casserole 1 24oz bag of frozen shredded hashbrowns 1 cup sour cream 1/2 onion, diced 2 cups shredded mild cheddar cheese (1 cup to mix in and 1 cup to top casserole) 1 stick butter, melted salt and pepper to taste Mix in a large bowl spread into 9x13 casserole dish top with remaining 1 cup of shredded cheddar cheese Bake at 350 degrees for 30 mins or until cheese is bubbly  Serve and Enjoy! My family absolutely LOVES this. 

Instant Pot Meatloaf

Instant Pot Meatloaf 2lb ground beef 1 cup oatmeal 1/2 onion diced 1 egg salt and pepper to taste mix well, with your hands of course :) spray a 6inch bundt with PAM and press meatloaf mixture into pan Cover with aluminum foil and puncture a hole in the middle to allow steam through Place the trivet in the bottom of your Instant Pot and add 2 cups of water Place the covered bundt pan into the Instant Pot on the trivet Put the lid on the Instant Pot and turn the valve to sealing. Select MANUAL and 35 minutes. This will take about 10 minutes to come to pressure before it starts counting down. Once finished allow the Instant Pot to Naturally release the pressure, about 15 minutes.  Remove the bundt pan and uncover.  There will be a small amount of grease in the pan, just like when cooked in the oven.
